Energy bars: 1 pack of our Açai strawberry chips, 240g cashew nuts, 40g oat flakes, 8 dates - finely chopped, 6 tbsp cashew puree, 2 tbsp melted coconut butter. Topping: 1 açai chocolate , 1 tbsp coconut oil, 3 tbsp raw cacao powder, 1 packet of our açai strawberry chips
Put the açai strawberry chips, cashews and oat flakes in a food processor and process until well ground. Then put the mixture aside in a bowl. Then, in a separate bowl, process the dates, cashew butter and coconut oil into a fine paste and add to the mixture. Mix everything together properly until it is all stuck together. Pour the mixture into a rectangular tin lined with baking paper (depending on how thick you want them) and leave to set in the fridge for at least 30 minutes. In the meantime, melt the chocolate, oil and cocoa powder in a water bath and then leave to cool. Once the energy bars have set, cut them into small slices. For the topping, pour over the melted chocolate and decorate with the açai strawberry chips. The energy bars can be eaten immediately or placed in the fridge to allow the chocolate to set. Enjoy!
