Zutaten

Vanilla Cashew Creme: 120 g über Nacht eingeweichte Cashews, 2 EL Ahornsirup, 70 ml Hafermilch, 2/3 TL Vanillepulver, 55 g geschmolzene Kakaobutter

Açai Himbeer Marmelade: 1 Packung gefrorenes Açai Püree (100g), 100 g gefrorene Himbeeren, 30 g klein gehackte Erdbeeren, 2-3 EL Ahornsirup, 1 1/2
EL Chiasamen

180g Schokolade und Açai Erdbeerchips

 

Anleitung

Für die Marmelade in einem Topf die Beeren, Açai und Sirup vermischen. Zum kochen bringen und 5 Minuten lang köcheln lassen. Die Chiasamen einrühren, pürieren und alles zum Abkühlen beiseite stellen.

Cashews, Ahornsirup, Hafermilch und Vanillepulver mischen. Geschmolzene Kakaobutter einrühren und alles glatt pürieren.

Die Marmelade in 12 Mini-Cupcake Formen aufteilen, mit der Cashew-Creme bedecken und zum fest werden für 1-2 Stunden in den Gefrierschrank stellen. Wenn du eine Silikonform verwendest, lässt sich die Marmelade mit der Creme einfacher herauszunehmen. Schmelze die Schokolade in einem Wasserbad und tauche die Marmelade ein, sodass die vollkommen bedeckt sind. Lege die Mini Cups auf ein Backpapier. Mit zusätzlicher Schokolade beträufeln und mit den Erdbeerchips dekorieren.


10-15 Minuten alles fest werden lassen und genießen. Die Mini Cups sind in einem luftdichten Behälter für mehrere Tage haltbar.
